I am not a fan of traditional Chex Mix. Nor am I a fan of the too sweet chocolate and/or peanut butter variants. When I first tasted General Mills Peanut Butter Chex cereal, I was hooked. It is light, crunchy, slightly sweet, but not overwhelming. I thought: This is what the peanut butter in those mixes should taste like! So I decided to create a mix using Peanut Butter Chex. Unlike all of the other Chex Mix recipes I've come across, this does not require any cooking. I suppose that makes it more of a trail mix than a Chex Mix, but I like it all the same. It doesn't have the strong, overpowering flavors that other Chex Mixes do. It is light, flavorful, and makes for a great snack. Since it doesn't require cooking, the recipe is very easy...just mix the ingredients and go...
Ingredients:
5 cups of Peanut Butter Chex
3/4 cup of Honey Roasted Almonds
2 cups of Pretzel Sticks
1 3.4 oz. bag of Fuji and Reds Apple Chips (I wanted to use the cinnamon, but the stores in my area were out *sniff*)
3/4 cup of Reese's Pieces
Gently mix together in a large mixing bowl. Transfer to a resealable container to keep it fresh.
* Keep in mind, this is based on my own preferences and dietary needs. I used Reese's Pieces because chocolate causes migraine headaches for me. Someone else may prefer M&Ms. I chose pretzel sticks. Someone else may prefer folded pretzels or no pretzels at all. Since I like peanut butter, but not actual peanuts (I know, I know), I opted for almonds. When making a mix like this the only limit is your imagination...so imagine!
